I found this recipe on Lowcarbyum.com and I was really excited to try it. If I can ever find a healthy alternative that I actually like, I’m happy! This recipe is really easy to make, which makes it even better.
You’ll need :
3 large eggs
3 oz cream cheese
Dash of salt
Pinch cream of tartar (optional)
Start by preheating your oven to 300 degrees and lining a baking sheet with parchment paper.
Separate the yolk and whites of the eggs into two bowls.
Using an electric mixer, mix cream cheese with egg yolk until well blended.
Using a clean mixer, whip egg whites and cream of tartar until very stiff.
If you want to add seasonings, you can mix it into the egg yolk mixture. Some options would be garlic, onion, spinach & herbs, Cajun and more. I used a mixture of onion, garlic and spinach & herbs. I used 1/4 tsp of each. As a sandwich this amount was good, but if you are eating it by itself, the flavor was a little strong.
Gently fold your egg yolk mixture into your egg whites, being careful not to flatten it.
Spoon 6 mounds into your lined baking sheet.
Bake for 25-30 minutes.
Cool for a couple minutes then finish cooling on a cooling rack.
Now you can use it however you like!! I added bacon and cheese and thought it made a great breakfast sandwich!!
