Cream Cheese Cookies

So I set out some cream cheese to use in a recipe, and then didn’t end up making that dish. But I didn’t want to waste that beautiful cream cheese! So what to do with it ? Well a google search brought me to Cakes Cottage where I found a cream cheese cookie recipe ! And I love sweets so this was right up my alley! My kids are also pretty picky and these seemed really simple!

For this recipe you’ll need to preheat your oven to 375 degrees and line your cookie sheets with parchment paper.

Cream 1/2 cup butter and 3 oz cream cheese.

Slowly add in 1 1/2 cups confectioners sugar. Beat until fluffy.

Beat in 1 egg, 1 3/4 flour, 1/2 tsp baking powder, and 1 tsp vanilla extract. Mix well.

Chill dough in the refrigerator for one hour.

Shape into 1 inch balls, and roll in sugar.

Place on lines cookie sheet and press down slightly to flatten.

Bake for 8-10 minutes.

They should look slightly under baked. If they are too done they won’t be chewy.

Cool for one minute then move to wire rack to finish cooling.

You can add additional powdered sugar to the top, but it’s not necessary.

This will make you around 2 dozen cookies.

Store in an airtight container ( if you have any leftovers!)
