The BEST Snickerdoodle Bars

I found this recipe at The Baking ChocolaTess while searching for an easy dessert to make for the crew of guys that were finishing out our basement. All the work that went into that basement is story for another blog, but it turned out amazing !Seriously we love it so much, I can’t help but show pictures of it. Okay so back to the snickerdoodles. The workers seriously lived off candy so I decided to give them something a little different! The recipe was so simple to make, I already had everything I needed in my pantry. And when the guys tried them, he said they were even better than his aunt’s. Which I’m taking as a compliment because she came from the “cooking era”!So this is now my go to recipe when I want to take a treat to a potluck event!

Okay so here is what you’ll need!

Cookie Dough:1/2 cup softened butter

1 cup sugar

1/4 teaspoon salt

1 large egg

1 1/2 teaspoon vanilla extract

1 cup all purpose flour


1 tablespoon sugar + 1 teaspoon ground cinnamon

Preheat oven to 350 degrees.Line an 8×8 pan with aluminum foil and spray with non stick spray.

In a large bowl with a mixer (or a stand mixer) blend 1 stick butter butter and 1 cup sugar until light and fluffy.Add in 1/4 teaspoon salt, 1 egg, and 1 1/4 teaspoon vanilla extract. Beat until well combined.Add in 1 cup flour and stir until there are no streaks of dry ingredients. I find it easiest to add 1/2 cup at a time.Scoop thick dough into greased pan and spread.Stir together 1 tablespoon sugar and 1 teaspoon ground cinnamon. And sprinkle over dough.Bake for about 30 minutes until the edges are very light brown.
